good gravy!
Those who know me well know that, as a general rule, I am not that big on gravy. Other than good ol' Southern biscuits and country gravy, gravy simply doesn't hit my plate. So I was surprised to discover that I could create a delicious gravy that even I love!
Start by melting about 2 tablespoons of butter in a small sauce pan. Add about 1 cup of sliced mushrooms. Sautee until mushrooms are cooked to a golden brown. Deglaze the pan with a splash of red wine, then reduce heat to low. Add a teaspon of Worcestershire sauce and bit of fresh chopped thyme. Then, add one 10 oz can of condensed cream of mushroom soup (low sodium!). Stir in one teaspoon of concentrated beef base. Finally, add a little bit of milk, just enough to thin the gravy down to desired consistency.
I served this over some beef patties for the best Salisbury steak ever. It was so good, I poured the remainder of it over my fried potatoes: that's something I would normally never do, so you know it must have been good.
